What is searing?

Searing is a grilling technique that aims to create a perfect crust on the surface of the steak, locking in all the juices and flavor.

How to sear a steak:

  1. Start with a good quality steak: Choose a steak with nice marbling, such as rib-eye, T-bone, or New York strip.

  2. Bring the steak to room temperature: This will help ensure even cooking.

  3. Pat the steak dry: Use paper towels to remove any moisture.

  4. Season with salt and pepper: Apply salt and pepper all over the surface of the steak.

  5. Preheat your grill: Preheat your grill to high heat. Ideally, you want the temperature to reach around 500°F (260°C). You can easily check this by holding your palm about 2 inches above the grate. If you can only hold it for a second or two, it's hot enough.

  6. Add oil: Drizzle some oil onto the grate if using a cast iron skillet or brush the steak with oil. Alternatively, for added flavor, you can use butter.

  7. Grill for a short time: Place the steak on the grill and cook for 1-2 minutes per side, just until a nice brown crust forms.

  8. Continue cooking: After searing the steak, reduce the grill temperature to medium-high and cook the steak to your desired level of doneness.

  9. Let the steak rest: Once the steak is cooked, let it rest for 5-10 minutes before slicing. This will help redistribute the juices and make the steak more tender.

Additional tips:

  • To adjust the charcoal temperature, you can use ash or, if you have a large grill, create two different heat zones. In one zone, stir the charcoal before placing the meat to get it "going" and burning intensely for the next few minutes. Once you've achieved the sear, move it to the lower heat zone.

  • Don't touch the steak while it's cooking to allow the crust to form evenly.
